Declared as the ''Prince of Cheese'' in 1815, this cow's milk cheese is matured in humid cellars for at least 6 weeks. It is a soft cheese with a white rind, an extra creamy texture and a buttery flavor with hints of hazelnut and mushrooms. Ile de France Brie was first brought into the United States in 1936 aboard the famed ''Ile de France'' - the first refrigerated ocean liner. Brie is most flavorful when served at room temperature. Pairs well with a Cabernet Sauvignon or a Pinot Noir. Comes in a full wheel in a traditional wooden box.
