Fontina is a semi-hard cow's milk cheese produced by the ''Cooperativa Produttori Latte e Fontina'' in the Aosta valley of the Italian Alps. It is an excellent table cheese aged for about 3 months with a dark yellow rind that hides a soft, buttery and fondant texture. It has a delicate nuttiness and a rich fruity and herbaceous flavor with hints of honey. Fontina is also the traditional cheese for fondues and is perfect for ''au gratin'' dishes. When melted, its flavor becomes earthy with hints of mushrooms. It is among the most imitated Italian cheese but has never been equaled by its imposters. The ''Cooperativa Produttori Latte e Fontina'' counts among the few members of the ''Consorzio Produttori Fontina'' which guarantees the DOP label and an unparalleled Fontina cheese quality.
