This savory Italian specialty is cured for 30 days in cellars which gives it a creamy texture. It has a mild, citrusy balanced flavor finishing complemented by the elegant spiciness of the peperoncino pepper. It is a great table cheese served with crackers and fruit such as grapes, berries or melons. You can also shave it on salads or pastas or use it as filling in ravioli or gnocchi.
